Ragi Cookies

Makes 12-15 cookies

Ingredients:

  • Jiwa Organic Ragi Flour: 1/2 cup
  • Jiwa Organic Chakki Fresh Atta: 1/2 cup
  • Butter: ¼ cup
  • Brown sugar: ¼ cup
  • Granulated sugar- ¼ cup
  • Yogurt: 1 tbsp.
  • Baking Powder: ½ tsp.
  • Baking soda- ⅛ tsp
  • Cinnamon powder: 1 – 2 tsp.
  • Vanilla Extract: 1 tsp.
  • Chocolate chips- ¼ cup

Method:

Mix the flours and roast in a pan on low heat till a toasty aroma fills your kitchen.

Meanwhile, beat the butter and sugars until soft and creamy.

Add in the baking powder, yogurt, vanilla, and cinnamon, and whisk again.

Once the flour mixture is cooled, add it to the butter sugar mix, and fold to combine.

Refrigerate the dough for 30 minutes.

Divide the dough into 12 equal portions, and flatten each one on a greased cookie sheet using a fork.

Bake for 12 minutes in a preheated oven at 180°C.

Cool on a rack till the outside feels crisp, or till the time you can resist the heady whiffs of freshly baked goodness!
