Vegetable Oats Dalia Khichdi

Heat 1 tbsp ghee in a pressure cooker. Add in 1 tsp cumin seeds, 1 chopped onion, 1 inch ginger (finely chopped) and 1-2 finely chopped green chillies. Sauté till the onions are lightly browned. Add ¼ cup chopped tomatoes, 1/2 cup cubed potatoes, 1/2 cup chopped carrots and 1/2 cup green peas. Rinse 1 cup of ‘Jiwa Oats Dalia’, and stir it in. Add 4 cups water, and salt to taste. Pressure cook for 2 whistles. Hurry on the 3rd one if the hunger is eating you up!

Method Roast 1 cup ‘Jiwa Oats Dalia’ in 1 tbsp Ghee till you can smell heaven in your kitchen. Pressure cook the Dalia with 3 cups water for 3 whistles. Boil 1 litre full fat milk in a pan till it reduces to half, scraping the sides often. Add the boiled dalia, 1/2 cup sugar and 1 tsp cardamom powder. Simmer on low heat till everything combines well. Garnish with fistful chopped dry fruits, few saffron strands (kesar), and sprinkle some dried rose petals for a royal touch.
